I am starting to use herbs, garlic, and onion more in their raw or living form, but I also use them alot in their dried form. I have even discovered that you can freeze fresh herbs, which seems to preserve the flavor better than drying. They get wilty when thawed, but it doesn’t matter if you are putting them in dishes like soup, stir-fry, or guacamole.

Growing herbs is pretty easy, although I have had the most success growing them outdoors. If grown indoors without a grow light or lots of sunshine they tend to grow less hardy, tall and stringy.

Good seasonings are essential to make food taste better. There is a list of spices and seasonings which are irritants or stimulants in the body, so I try to avoid those as much as possible. They include cinnamon, mustard and chili peppers (but not cayenne).

Some of the good seasonings I use alot are as follows:

lemon juice
garlic
onion
celery salt
rosemary
dill
parsley
cilantro
thyme
basil
oregano
coriander

Cloves, cayenne, ginger and tumeric have medicinal properties.
